It’s fall break from school and the kids are home with no certain plans. Sometimes it’s nice to have no plans, no place you have to be at any set time. We are just taking life as it comes making ourselves some errands just to have something to do. Keeping the house clean and tidy and making some nice warming foods with no pressure of a deadline feels almost luxurious. Ulrikke and Oliver are good at playing and keeping themselves busy. Jumping on the trampoline, excursion with me to grocery shop, a new computer game to try or just playing with one of their many toys, today has been like a little piece of heaven and I can tell we all needed to just slow down a bit…
As the day went by and we were puttering about doing our thing, time was getting closer for mrlovely to come home from work. I had decided to make a nice soup with lots of vegetables and some meat. This time of year when the days get shorter and the weather colder I always like to make meals that warm you from the inside out, today this was a hardy soup…
One small swede cubed
Four large carrots sliced in rings
Two large potatoes cubed
Two large sweet potatoes chopped in small cubes
One fennikel cut in strips
Two large bunches of spring onion chopped
Three cloves of garlic finely chopped
1/2 chorizo sausage cut in small cubes
Two large steaks cut in bite size pieces
Fry the garlic, spring onion, fennikel, chorizo and meat in a knob of butter in a large sauce pan. Stir and let the meat brown for about five minutes.
Add the rest of the vegetables, 3L of water and three beef stock cubes. Let it come to a boil then leave it to simmer for about two hours.
While the soup was simmering I had plenty of time to hoover and set the table. Dinner was served with a tiny bit of jarlsberg cheese on top and nice bread on the side. We were all happy campers, became comfortably stuffed and felt the warmth spread through our bodies.
After dinner was tidied away the fireplace was lit and we all bunched up in the sofa to watch romancing the stone. It’s been a very comfortable day, a day I think we all needed… I look forward to seeing what tomorrow brings our way…
