Comfort food, food for the heart and soul…

In the spirit of nurturing my loved ones I made my favorite burgers ever, Jamie Oliver’s Botham burgers:
Ingredients

1 lb of good quality ground beef, preferably natural or organic
1 medium red onion, diced
1 large egg
1 handful of fresh bread crumbs with crust removed(about on slice)
1/2 tbsp coriander seeds, crushed
1 small pinch of cumin seeds, crushed
1 tbsp Dijon mustard
salt and freshly ground pepper
4 whole grain hamburger buns.
How to make it

Preheat the barbecue to medium high.
“Mix and scrunch all the ingredients together. Divide into 4, then gently mold and pack each burger into smallish slightly flattened balls.”
Brush grill grates clean, then brush lightly with oil. Place burgers on grill and cook rotating after 3 minutes, roughly 6 minutes per a side, until burgers are cooked through but still juicy. Toast hamburger buns placing cut side down on grill.
Serve immediately with your favorite fixings!

I serve mine with home made salsa:

Two handfuls cherry tomatoes diced
Half a cucumber peeled, deseeded and diced
Half a red onion diced
A small handful capers
A small garlic clove finely chopped
A big handful flat leaf parsley chopped
One piri piri chili crushed
About a tbl spoon good balsamic vinegar
About five tbl spoons good olive oil
A pinch of salt and pepper
Mix together in a bowl, keeps for about three days…

And my quick and easy hummus:

One tin chick peas
Four tbl spoons olive oil
Juice of one lemon
One large garlic clove
Cummin seeds and one piri piri chili crushed (in pestle and mortar)
Salt and pepper

Mix it all with a hand held mixer

Serve all together in a burger bun, eat and enjoy…you’ll love it!!!
